While cooking the turkey, I came up with a new style self-basting roaster (or at least I think it is new, may have already been done, but a quick online search did not show any).
Most self-basting roasters work on condensation, that is the water in the pan turns to steam and then condenses when it hits the lid and falls back on the food. Well, how about a roast that can still be self-basting even with no lid?
It seems that a simple design, much like the old coffee pots would work well as a self-basting roaster. In this model there would be a small well around the bottom of the pan where juices gather. Along the sides of the pan there would be small metal tubes with directional caps that would carry the juices back to to the top and spray them out over the contents as the juices boiled.
With this design, you would not have condensed water falling over the contents, but it would be the actual juices basting the contents and doing so with volume. I have not tested this design, but it seems like it would make for a far more flavorable end product.
